The rarest flight
Microraptor is the first coffee to reveal the Mythic class of Roastersaurus, the rarest of them all. Mythics are defined not only by scarcity but by precision, coffees that exist once and never the same again. Capulinero, from Beneficio La Chumeca in Costa Rica, embodies this rarity. Its story is one of serendipity and mastery, producing a cup that is winey, complex, and unlike any other.

The Art
This card was illustrated by the talented @kitsukaizen. Our Microraptor hovers above the stainless steel tanks of La Chumeca, evoking the three-phase fermentation that defined Capulinero. The dino’s flight mirrors that of the Capulinero birds, who appeared and disappeared alongside the process itself. With a coffee cherry in its beak and wings shimmering in foil, the Microraptor captures the elusive and fleeting nature of the Mythic class, here for a moment, never repeated.

The Producer: Beneficio La Chumeca
Capulinero comes from Beneficio La Chumeca, a Costa Rican mill dedicated entirely to natural coffees. Where many producers divide their focus across washed, honey, and naturals, La Chumeca chose to specialise. Their belief is that focus brings refinement, and by perfecting naturals alone, they unlock depth and clarity others rarely achieve.
The farm sits at 1,700 masl, shaded by banana and guineo trees that slow ripening, build sweetness, and nourish the soil. Every stage is deliberate, from soil nutrition to selective harvesting at 22 Brix, ensuring cherries are picked only at peak ripeness. At this altitude, cool nights stretch the maturation cycle, layering sugars and acids for a cup that is both vibrant and structured.
La Chumeca is celebrated for both mastery and adaptability. Their coffees are known for clarity, sweetness, and intensity, but they are also unafraid of the unexpected. Capulinero is their most poetic example, a process shaped by weather, guided with care, and transformed into a once-only coffee.

The Capulinero Process
Capulinero began its journey in stainless steel tanks, sealed for an anaerobic fermentation. Once the first stage was complete, the cherries were moved into bags for an oxidative phase. Heavy rains arrived unexpectedly, forcing the team to return the lot to anaerobic fermentation once more.
The result was a three-phase process, never planned but carefully managed. During this time, flocks of Capulinero birds appeared at the farm, circling above and vanishing only when fermentation was judged complete. Their timing was uncanny, as if they had flown with the coffee itself.
With fermentation finished, the cherries were taken to raised African beds and sun-dried. A process born of chance, weather, and instinct became something unforgettable, both precise and serendipitous, a story written into the cup.

The Cascara
La Chumeca extended the journey further by processing the cascara from these same cherries. In keeping with their ethos of collaboration, they entrusted the work to a neighbour specialising in fruit drying. The result is a cascara as layered as the coffee itself, brewed as a tea-like infusion with notes of fruit sweetness and floral lift.
Cup Character
Agile and wine-like with tropical notes of persimmon and mango, berry-like flavours of strawberry and mulberry, finishing in smooth chocolate truffle. A cup that evolves sip by sip, winey, complex, and rare.

It symbolises coffees that strike with impact before vanishing, rare, unrepeatable, and precise. Just as the Capulinero birds departed when fermentation ended, so too does this coffee represent a singular flight, never to return in the same form.
