Some coffees arrive with a sense of occasion. Not simply because of their rarity, but because of the story that surrounds them.

Las Margaritas Honey Geisha is one of those coffees.

Grown at Café Granja La Esperanza in Colombia’s Valle del Cauca, this honey processed Geisha carries tropical fruit, florals, and deep sweetness across a silky body. Strawberry candy opens into guava and papaya, florals rise through the middle, and honeyed sweetness lingers long after the final sip. The cup moves with quiet control, unfolding gradually rather than rushing forward.

For Roastersaurus, this release marks a Founder moment.

The coffee was purchased specifically to celebrate Diana Johnston’s fortieth birthday, a rare and costly lot chosen not only for its quality, but for what it represents. More than a decade earlier, one of Diana’s first major coffee competitions featured a Geisha from Café Granja La Esperanza. That coffee left a lasting impression, revealing the clarity and elegance that would shape her understanding of what coffee could become.

Years later, another Geisha from the same legendary producer returns for this moment.

Within the Roastersaurus world, moments like this sometimes reveal new creatures.

This time, it is the White Sabertooth.

A prehistoric hunter known for patience and precision, the Sabertooth waits, observes, and then strikes with unmistakable clarity. Its presence fits naturally within the ancient landscapes that Roastersaurus draws from, creatures shaped by time, evolution, and instinct.

Just like the cup itself.

The Art

The White Sabertooth sits calmly within the landscape of Las Margaritas, surrounded by dense forest and rising mist. Behind her flows Las Margaritas Falls, a real waterfall on the farm where this coffee was grown. The water pours over stone before dividing into two streams that disappear into the forest below.

The movement of the waterfall mirrors the movement of the cup itself. Flavour begins softly before widening across the palate. Tropical fruit and florals expand outward before sweetness gathers and lingers.

The Sabertooth carries subtle personal details that connect the creature to the Founder behind the release. Her eyes shine gold, and feather earrings hang from her ears, echoing those worn by Diana. Shimmering stripes run through her white fur, catching the light as she sits in stillness.

She does not rush.

She waits.

A Creature of the Same World

Roastersaurus draws its inspiration from deep time. Dinosaurs, ancient landscapes, and creatures shaped by long evolution mirror the way coffee itself develops through land, climate, and careful cultivation.

The Sabertooth belongs naturally within this prehistoric world.

Known for precision rather than chaos, sabertooths hunted with patience and timing. They conserved energy, choosing the exact moment when their strike would be most effective.

The White Sabertooth appears only during rare Founder moments within the Roastersaurus story. These are releases tied to significant occasions, moments when the world of the deck expands and new chapters emerge.

They are uncommon, deliberate, and deeply connected to the story behind the coffee.

The Producer: Cafe Granja La Esperanza

Few producers have shaped modern specialty coffee as profoundly as Café Granja La Esperanza.

Founded in 1945, the Herrera family estate began with the Potosí farm in Valle del Cauca. Over generations it expanded into a network of farms including Cerro Azul, Las Margaritas, La Esperanza, and Hawaii. Each farm explores different varieties, elevations, and processing methods.

The estate became globally recognised for cultivating rare coffee varieties and refining innovative processing techniques. Their coffees frequently appear on competition stages and have helped redefine what ultra specialty coffee can become.

Innovation at Granja La Esperanza is guided by discipline and patience. Agronomy, experimentation, and careful observation allow each variety to express itself fully.

The Farm: Las Margaritas

Las Margaritas sits in the municipality of Caicedonia in Valle del Cauca, between 1648 and 1852 metres above sea level.

The landscape is lush and layered. Dense forest, volcanic soil, and natural waterways shape the environment where the cherries grow. Among these waterways sits Las Margaritas Falls, the waterfall captured in the artwork of this release.

Within the Granja La Esperanza estate, Las Margaritas functions as a living laboratory for rare coffee varieties. Geisha and other cultivars are planted across different sections of the farm, allowing the team to study how microclimates influence flavour and development.

Before fermentation even begins, the environment has already shaped much of the cup.

The Coffee: Geisha

This lot shows a rich expression of the Geisha variety.

Honey processing leaves part of the fruit mucilage on the seed during drying. The sugars in that remaining fruit deepen sweetness and broaden texture, producing a cup that carries both vibrancy and structure.

Where washed Geishas often highlight florals and delicate clarity, this honey processed lot introduces additional tropical depth and silky weight.

Elegance with presence.

The Process: Honey

Cherries are harvested at peak ripeness and floated to remove lower density fruit. Brix levels are measured before fermentation begins.

The cherries undergo an initial 18 hour fermentation in open tanks, followed by depulping and a second 72 hour aerobic fermentation that allows fruit sugars to interact with the seed and deepen flavour complexity.

Unlike washed coffees, the remaining mucilage is not removed. The coffee moves directly into drying, where it rests in mechanical dryers for three to five days at controlled temperatures around 38°C, before stabilising in climate controlled storage.

The result preserves the perfume of the Geisha variety while amplifying sweetness and body through the honey process.

Cup Character (extended)

Silky. Lush. Decadent.

Strawberry candy opens into guava and papaya, moving through custard apple and banana with white melon and apricot, lifted by jasmine and lavender florals and a silky honeyed sweetness.

The cup expands gradually. Fruit leads the movement, florals rise through the middle, and sweetness settles into a long and composed finish.

Like the Sabertooth itself, the experience builds quietly before revealing its full power.
